Recipe of the Month:
It's peach season here in Fredericksburg, and this tart is one of our favorite ways to use our local peaches. It's an easy, one bowl recipe. Enjoy!
CAMP DAVID PEACH TART
7 Tbsp Butter, a frozen stick works best
½ cup Sugar
1 Egg
pinch of Salt
1 cup Flour
scant ½ tsp Baking Powder
Sliced Peaches, Plums, Blackberries, or Dewberries …..almost any fruit somewhat tart fruit. If you can get Damson plums, they are the very best for this, although our little local plums are good, too.
Preheat oven to 390. (400 if your oven won’t register 390) Stir the Flour, Sugar, Salt and Baking Powder together in a large bowl. Using your box grater, grate the 7 Tbsp Butter into the flour mixture. Toss with your hands, doing your best to keep the butter from forming huge clumps. The mixture needs to be crumbly. Add the Egg and Vanilla, and yes, you can toss all this with your hands, too.
Sprinkle the mixture about ½ inch deep in a tart pan, spring form pan or pie plate. Pat it down gently, just enough to level the surface. Chill till firm. Place sliced fruit on top. Sprinkle Streusel Topping over all. Bake until golden. At least 30-40 minutes. The dough freezes well, if you need to wait. Recipe doubles easily. One recipe fills two 8 inch pie plates or one deep tart pan.
STREUSEL TOPPING
6 Tbsp Chilled or Frozen Butter
¾ cup Sugar
1 cup Flour
scant ½ tsp Cinnamon
Stir Flour, Sugar and Cinnamon together. Grate the Butter in until mixture is crumbly.
